The 47-year-old Lopez operates his company out of Shared Dream Kitchen in Elgin, where he and four staff members, including his parents, start making tortillas at two in the morning and finish making roughly 6,000 of them each day.
About six weeks after he began, he was producing 600 tortillas every other day. He stated he is currently doing two rounds of deliveries per day to stores in Carpentersville, Carpentersville, and Elgin, and returning to refill if more product is required.
